You can normally tell how interesting a mushroom is by how many aliases it's known by. The Porchini is no exception, penny bun, king bolete, Cep, Boletus edulus.

Luckily this is part of the easiest families to identify with simple rules to follow for ID:

1. Is it a bolet? - Boletes are upright mushrooms and have no gills but spounge like pours tunneling into the underside of the cap.

2. Has is got red on it? - Anywhere!? this can be a sign of toxins within.

3. Is it a blue blusher? - Cut it and you'll know. If it turns blue soon after the attack, don't choose this bad ass mushroom for a snack.

Nous avons fini in the ID... The only species yet to avoid isn't toxic but it's name is enough to explain the sour bolete.

This can be id'd by smell or taste, if your specimen follows the rules 1-3 either get some of that shroom into your sinus and if your still not sold slice a tiny piece from the inside of the cap (not the skin avoid crafty deer pee, and not the little holes they hold extra protien a little touch on the tongue is enough to tell.
